Oven Parmesan Chips
This recipe is adapted from a Weight Watchers recipe.
1 baking potato
1 tablespoon olive oil
3 tablespoons Parmesan cheese (I use stuff in green container)
3 tablespoons minced chives (optional)
salt to taste
Preheat oven to 400.
Clean potato and cut into very thin slices (using mandolin helps). Combine slices with oil in large bowl. Add cheese, chives, and salt and toss to combined.
Place potato slices on single layer on baking sheet that has been coated with cooking spray. Bake at 400 degrees for about 18 minutes or until golden brown.
