Squash Casserole

I tried this recipe for the first time today. It turned out good and was a hit at our final Financial Peace University class.

Squash Casserole

3 cups of cooked squash with onion
1/2 stick butter
1 beaten egg
1/2 cup sour cream
1 1/2 cups grated sharp cheddar cheese
3/4 roll crushed Ritz crackers
1/2 stick butter

Mix the first 8 ingredients together. Put in greased baking dish. Mix crushed crackers and melted butter together. Spread over squash mixture. Bake at 350 degrees until bubbly--approximately 30 minutes.
