Homemade Salsa



Here is the recipe for the homemade salsa that I promised in my Menu Plan Monday Post. This is so simple to make and very frugal--especially if you use those near free Muir Glen Organic Tomatoes that many of us got for $0.18 at Walmart (after coupons)!

Homemade Salsa


1 large can of crushed tomatoes (28 oz.) or two 14.5 oz cans diced tomatoes -use immersion blender
1/2 red onion (I substitute with white or yellow-whatever is on hand)
1 clove garlic
1/2 tsp salt
2 Tbsp cilantro (or more if you like)
1 Tbsp lime juice
2 jalapeno peppers, chopped (more if you like)
1/4-1/2 tsp cumin
1/4-1/2 tsp cayenne pepper

Mix and let set 1 hour, stirring occasionally.

Many times we will also make fresh tortilla chips by cutting corn tortillas in quartered triangles and frying in a pan with some vegetable oil.

Yum!

I'm going to have to try this. My typically non-veggie eaters will actually eat salsa! Looks yummy for a healthy snack. But sadly, I missed the near free deal!
